Healthy Eating: Golden Beet Salad with Shallots, Parsley, and Orange Miso Dressing





for the salad:
3-4 medium golden beets
10 small shallots
1 cup uncooked rainbow quinoa
1.5 cups vegetable broth
2 small seedless navel oranges, segmented and chopped (see note)
1/2 cup minced fresh parsley
handful finely chopped pistachios, for garnish (optional)
Orange Miso Dressing: (makes: ~1/3 cup)
1/3 cup orange juice
1 tbsp toasted sesame oil (or olive oil)
1-2 tbsp light miso dressing (I used 2 tbsp chickpea miso), to taste
1 medium garlic clove, peeled
1/2 tsp minced fresh ginger
1/2 tsp cane sugar (or maple syrup), or to taste
1. Preheat oven to 375F and line a dutch oven or heavy-bottomed pot with a piece of parchment paper.
2. Trim beet greens, leaving 2-3 inches of the stem on the beet (this prevents the beet from drying out while roasting). Note: If you buy loose beets without stems this is fine too. Use what you can find. Reserve beet greens for sautéing, if desired. Wash beets, but do not peel them.
3. Place beets inside the pot. Drizzle on olive oil and sprinkle with salt and pepper. Roll around the beets to coat.
4. Soak shallots in a bowl of water for a few minutes. This helps to loosen the skin. Slice both ends off the shallots and then peel all the skin off each. Place a piece of tin foil on the counter (about 1 square foot) and place the shallots on top. Drizzle with olive oil and sprinkle with sea salt and pepper. Rub the shallots to combine. Gather the tin foil at each side and crinkle it upward to seal the top. Place shallots in the pot along with the beets.
5. Place lid on pot and roast beets and shallots for about 1 hour at 375F.
6. Meanwhile, cook the quinoa. Rinse the quinoa in a fine-mesh strainer and place it into a pot along with 1.5 cups of vegetable broth. Bring to a low boil, reduce heat to low-medium, and cover with tight fitting lid. Simmer for 17-20 minutes covered, or until all the water is absorbed. Remove from heat and let stand for 5 minutes. Fluff with fork.
7. Prepare the dressing by processing together all the dressing ingredients. I like to use a mini processor for my dressings because the clean-up is minimal. You could also whisk everything together by hand too.
8. After 1 hour, remove pot from the oven to check on things. Remove the shallots and set aside on the counter (keep the tin foil on so they stay warm). Carefully, prick the largest beet with a fork. If it slides easily through, it’s ready. If your fork feels resistance, it needs more time in the oven. I had to cook my beets for about 1 hour and 25 minutes, so don’t be alarmed if it takes you more time.
9. Remove beets from oven, remove lid, and allow beets to cool until they can be handled. Trim both ends of the beet and discard. Run water over beets and peel the skin off with your fingers (the skin should slide off fairly easily) and then slice beets into bite-sized pieces for the salad.
10. To assemble the salad: Toss together the cooked quinoa, chopped parsley, Herbamare or sea salt, and a couple tablespoons of the dressing. Gently fold in the shallots, segmented oranges, and beets. Drizzle on the rest of the dressing, sprinkle on pistachios (optional), and serve immediately.

Verse of the Day: Isaiah 53:5-6 - He was wounded for us

But he was wounded for our transgressions, he was bruised for our iniquities: the chastisement of our peace was upon him; and with his stripes we are healed. All we like sheep have gone astray; we have turned every one to his own way; and the Lord hath laid on him the iniquity of us all.

Let us always remember that Jesus died for our sins, he was battered beaten and bruised & bared the cross for us.  So many of us have strayed from the teachings of the Lord  and seem to have lost our way.  Jesus died so that we might be saved, let us pray that we are saved in God's kingdom so that the sacrifice Jesus made will not be in vain.

We thank you for dying on the cross to save us from our sins, help us to remember that it was not some sort of fairytale but a true to life story.  Help us to realize that we would not be here if it wasn't for the sacrifice you made for us.  Lord we humbly ask for your forgiveness of our sins, help us this day to be renewed in you, help us to commit to your word & your will, starting right now.  Lord we need peace, understanding and a clear mind.  In Jesus Name. Therefore being justified by faith, we have peace with God through our Lord Jesus Christ:

Once we've accepted God as our Saviour  we should be completely dedicated to him.  Our Faith should be stronger, and our deeds and actions should be of the likeness of Christ.  We will be more at peace and all our worries and cares will seem insignificant.  Let us pray that our faith in Christ remains strong.

Verse of the Day: Proverbs 1:1-8 - Learn, Understand & Gain Wisdom

To know wisdom and instruction; to perceive the words of understanding;
To receive the instruction of wisdom, justice, and judgment, and equity;
To give subtilty to the simple, to the young man knowledge and discretion.
A wise man will hear, and will increase learning; and a man of understanding shall attain unto wise counsels:
To understand a proverb, and the interpretation; the words of the wise, and their dark sayings.
The fear of the Lord is the beginning of knowledge: but fools despise wisdom and instruction.
My son, hear the instruction of thy father, and forsake not the law of thy mother:

 Giving instruction to others is good, but it is also good to receive instruction & to learn from your elders.  Sometimes we think we know it all and think we can teach others a thing or too, but if we don't follow the right instructions we may be headed for trouble.  Let's ask God to help us in our daily lives that we will listen to instruction, understand it so that we may be wise in the Lord.

Ephesians 6:7-8- Doing Good Service

 With good will doing service, as to the Lord, and not to men:
Knowing that whatsoever good thing any man doeth, the same shall he receive of the Lord, whether he be bond or free.

Ever do something good and expect praise from the one you've done the good deed?  If you don't receive any praise or accolades you feel as if this person wasn't grateful.  We need to realize that when we do good it should be wholeheartedly for God He is the one that will reward you for your good deed.  We need to stop looking towards man for praises and start praising God for the blessings he's bestowed on us.

Let us begin to read His word thoroughly, We should ask for guidance when reading his word so that God will help us understand it.  Reading the bible should not be a rushed thing, take the time to pray first and read just like you would do when studying for an exam.  Let's pray that we not rush the reading of God's word but that we take time to understand it so that we may in turn teach other.

 But he that shall endure unto the end, the same shall be saved.
14 And this gospel of the kingdom shall be preached in all the world for a witness unto all nations; and then shall the end come.

Believe it or not this world will not last long and the reality is God will be coming to take the righteous home with Him.  We tip toe around this subject far too often but the signs are there, we feel it and see it around us.  Let's do our part in speeding up the process of God's coming by telling others about His word.  Let us also follow his word, so that we too may be saved in His Kingdom.  I encourage you to read up on Matthew 24.

God intended for man to eat the fruits of the earth.  There was and still is enough fruits & vegetable options on this earth to satisfy us.  Daniel and the three Hebrews only ate fruits, vegetables & grain and they were the wisest and strongest of all.  Time and time again eating right has been proven to keep us healthy and strong, let's not yield to the food temptations of this world.  Let's pray for strength and willpower to say no to unhealthy foods.

Healthy Eating: Vegan & Gluten-Free Vanilla Blueberry Buckwheat Pancakes

Ingredients:
  • 1/2 cup raw buckwheat groats (not kasha), ground into a flour
  • 1/4 cup brown rice flour
  • 1 tbsp cornstarch
  • 1 tsp baking powder
  • 3/4 cup + 2 tbsp almond milk
  • 2 tbsp pure maple syrup (or other liquid sweetener)
  • 1 tsp pure vanilla extract
  • 1 medium ripe banana, diced
  • 1 vanilla bean, scraped (optional)
  • 1/2 cup blueberries (optional)

1. Preheat a large non-stick skillet over medium heat.
2. In a blender, blend the buckwheat groats on high speed until a fine flour forms. Place into a large bowl. Now whisk in the rest of the dry ingredients (rice flour, cornstarch, baking powder).
3. Pour in the almond milk, maple syrup, and vanilla extract. Whisk the batter until no clumps remain.
4. Fold in the diced banana and scraped vanilla bean. If using fresh blueberries, mix them in now.
5. Lightly grease skillet. Scoop 1/4 cup of batter onto the preheated skillet. If using frozen blueberries, sprinkle on a heaping tablespoon of blueberries. Cook until many bubbles appear and then flip and cook for another couple minutes. Repeat for the other pancakes.
Note: If using frozen blueberries, pour batter onto skillet first and then top with blueberries to prevent bleeding. I also tried subbing the rice flour for oat flour and the pancakes completely stuck to the pan, so I would advise against that substitution.

Finally, my brethren, be strong in the Lord, and in the power of his might. Put on the whole armour of God, that ye may be able to stand against the wiles of the devil.

 So many times we fall, so many times we fail in life.  It shouldn't be this hard right?  And it doesn't have to be.  Once we are entirely covered in Christ we can then stand up to anything, trials, tribulations will not be able to get the best of us.  Let us pray for strength to stand against the devil.  Let us pray for strength in the Lord.

Only with God's help can we rid ourselves of evil.  The Devil will continue to tempt, torture and tantalize us with sin.  We must be strong enough to realize this and seek God to help us overcome, then will the Lord help us to do well in our lives, in turn creating a good life for ourselves and helping others around us.

God knows us, when we feel no one else understands us, when we can't get the right words out of our mouth.  He knows what were going to say, he understands our feelings and our thoughts.  Why not build a relationship with Him as He should be your closest and dearest friend.  He'll help you  through your darkest our, when things aren't going the way it should.  He'll step in front of you and lead the way.  He's your ambassador and He'll be there for you.  So let's pray for Him to continue to be there, let's pray that we accept Him and let him work for us because he knows us so well.

We are far from perfect and we all make mistakes.  Sometimes we may not even realize that our words may offend others, and of course we are not mind readers so we may not even know what their thinking or feeling.  But God knows how to help us and if we don't turn to him we may not be able to realize just how wrong we are.  Let us pray to God asking him to show us when we are wrong, let us ask him to help us not to offend our brothers & sisters but to speak words of kindness and love.

Healthy Eating: How to bake a healthier cupcake



Blueberry Cupcakes

The “secret ingredient” in these coconut-infused blueberry cupcakes—mashed potatoes—gives the cake great texture, almost like pound cake. The fluffy frosting is just fun. Because it’s low in calories and fat, you can spread or pipe a generous amount on top of each cupcake to make them look extra festive. The frosting stiffens as it stands, so be sure to put it on the cupcakes right after you make it.
12 cupcakes | Active Time: 45 minutes | Total Time: 2 1/4 hours (including cooling time)

Ingredients

Cupcakes

  • 1 large Yukon Gold potato, peeled and cut into small chunks
  • 3/4 cup whole-wheat pastry flour (see Note)
  • 3/4 cup cake flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/4 cup canola oil
  • 1 large egg
  • 1/2 teaspoon coconut extract or vanilla extract
  • 1/2 cup nonfat buttermilk (see Tip)
  • 1 cup blueberries, fresh or frozen (thawed and drained), plus fresh blueberries for garnish

Frosting

  • 3/4 cup granulated sugar
  • 3 tablespoons water
  • 4 teaspoons dried egg whites (see Note), reconstituted according to package directions (equivalent to 2 egg whites)
  • 1/4 teaspoon cream of tartar
  • Pinch of salt
  • 2-3 tablespoons blueberry preserves or jam
  • 1/4 teaspoon coconut extract or vanilla extract

Preparation

  1. To prepare cupcakes: Preheat oven to 350°F. Line 12 (1/2-cup) muffin cups with paper liners.
  2. Place potato in a saucepan, add water to cover and bring to a boil. Cook until tender, 8 to 10 minutes. Drain and mash until very smooth. Measure out 3/4 cup and let cool slightly. (You may have some potato left over.)
  3. Whisk whole-wheat flour, cake flour, baking powder, baking soda and 1/2 teaspoon salt in a medium bowl.
  4. Beat granulated sugar and oil in a large mixing bowl with an electric mixer on medium speed until combined. Beat in egg, 1/2 teaspoon extract and the 3/4 cup mashed potatoes until combined. With the mixer on low, alternately mix in the dry ingredients and buttermilk, starting and ending with dry ingredients and scraping the sides of the bowl as needed, until just combined. Fold in 1 cup blueberries. Divide the batter among the prepared cups (they will be full).
  5. Bake the cupcakes until a toothpick inserted into the center comes out clean, 22 to 24 minutes. Transfer to a wire rack and let cool completely.
  6. To prepare frosting: Once the cupcakes are cool, bring 2 inches of water to a simmer in the bottom of a double boiler (see Tip). Combine 3/4 cup granulated sugar and 3 tablespoons water in the top of the double boiler. Place over the simmering water and heat, stirring, until the sugar is melted, 2 to 3 minutes. Start beating the mixture with an electric mixer on high speed; add reconstituted egg whites, cream of tartar and a pinch of salt. Continue beating until the mixture looks like a glossy, thick frosting, 5 to 7 minutes. Off the heat, beat for 1 minute more to cool. Add 2 tablespoons (or more, depending on desired color) blueberry preserves (or jam) and 1/4 teaspoon extract and beat on low just to combine. Spread or pipe the frosting on the cooled cupcakes and decorate with fresh blueberries on top, if desired.

  • Make Ahead Tip: Store unfrosted cupcakes airtight at room temperature for up to 1 day. | Equipment: Muffin tin with 12 (1/2-cup) cups, paper liners
  • Ingredient Notes: Look for whole-wheat pastry flour in the natural-foods section of large supermarkets and natural-foods stores. Store in the freezer.
  • Pasteurized dried egg whites are a wise choice in recipes that call for uncooked egg whites. Look for brands like Just Whites in the baking or natural-foods section of most supermarkets.
  • Tips: No buttermilk? You can make “sour milk” as a substitute: mix 1 1/2 teaspoons lemon juice or vinegar to 1/2 cup nonfat milk.
  • To improvise a double boiler, bring 2 inches of water to a simmer in a large saucepan, set a medium or large metal bowl over the simmering water. Allow at least an inch between the water and the bottom of the bowl. SOURCE

Verse of the Day: Proverbs 23:6-7-Flee from evil suitors

Eat thou not the bread of him that hath an evil eye, neither desire thou his dainty meats:
For as he thinketh in his heart, so is he: Eat and drink, saith he to thee; but his heart is not with thee.

In keeping with living under God's plan we should always take head to his warnings and his instructions.  There are so many deceitful people in this world, and it is important that we recognize them and stay away.  Some may come as wolves in sheep's clothing but God will reveal them to us if we are willing to see.   Let us pray for clarity and a strong enough backbone to see the evil and run.

We need to realize that we cannot hide from God.  He sees and he knows everything, and he will find you wherever you are.  It doesn't make sense dabbling in things that are not of Him, In the end God will find you and will lead you back towards him, all you need to do is listen to his calling.  Let us pray for courage today.

Verse of the day: 1 Samuel 3:9 - Obeying His Call

Therefore Eli said unto Samuel, Go, lie down: and it shall be, if he call thee, that thou shalt say, Speak, Lord; for thy servant heareth. So Samuel went and lay down in his place.

Many of us are called to do the work of the Lord just like Samuel was.  But so many of us ignore His calling.  Let us pray that we are obedient and that we will listen to God's voice when He calls us to do His work.  Let us pray for the faith we need to trust that God knows what's best and the strength we need to listen to him and follow his instructions.  We are all placed on this earth for a short while so let us do the best we can to obey God's call.

Dear Jesus

You are worthy to be praised.  We are thankful that you even chose us to do your will.  So many people don't have the opportunity to even be able to get up and speak.  You have given us life, health, strength and an abundance of other things we are not even worthy of.  Help us to just fall on our knees when you call and to listen to your instructions. In Jesus Name, Amen

Verse of the Day; Isaiah 40:31- Wait on the Lord

31 But they that wait upon the Lord shall renew their strength; they shall mount up with wings as eagles; they shall run, and not be weary; and they shall walk, and not faint.

So many times we go against want God wants for us and rush into things, only to realize that what we wanted failed to help us or to make us happy.  Sometimes we rushed too fast without seeking the Lord first.  There are many things we want out of life, but some things whether it be good or bad, may not be what the Lord wants for us.  He sees the future and He sees that what may satisfy us in the short term may be devastating for us in the long term.  Let us pray to God and ask him to show us what is best for us.  He may say yes, maybe, wait or no.  Let's leave all the decision making to God & wait for his answer.

Dear Jesus

Thank you for your Love and your promise of salvation.  Lord, we are very grateful for life, health & strength.  We seek you out now Lord asking for your help in giving us the strength we need to resist the temptation of being impatient.  Lord, help us to realize that you alone know what's best for us and that if you see that something is not right for us, that we should trust that you know what is best.  You always have a better plan for us, so help us to put our whole faith and trust in you and not depend on our own decisions for our lives.  In Jesus name, Amen

Verse of the Day: Joshua 1:9 - God is with you wherever you go

Have not I commanded thee? Be strong and of a good courage; be not afraid, neither be thou dismayed: for the Lord thy God is with thee whithersoever thou goest.


In all that we do, let us remember to trust that God will see us through.  Having complete faith in him and being courageous is what God wants from us. Let us pray for strength, courage & fearlessness.

Verse of the Day: Psalm 73:25-26- Turn to Jesus

Whom have I in heaven but thee? and there is none upon earth that I desire beside thee. My flesh and my heart faileth: but God is the strength of my heart, and my portion for ever.

When all else fails and when there is no one to turn to when you are in distress, remember there is one who will stick with you closer than any brother.  Jesus will always be there and will strengthen you when you are weak.  Let us pray that we will always remember this.

We thank you for your love and for always standing by our side.  Lord, we ask today that you will give us the strength we need to overcome the trials and tribulations that we may be facing.  Help us to remember that we should not cling to man and to expect anything from them.  Help us to remember that all expectations and hope should be on you and you alone.  Thank you for your grace and mercy, In Jesus name, Amen
